Last spring we road-tripped it from NOLA to Avery Island, Louisiana, home of Tabasco. Why was the famous red stuff made there? Salt. A salt-deposit sits under Avery like an inverted Everest. Mr. McIlhenny cultivated his perfect little red peppers up top, mined the salt from below, added vinegar, waited, and voila. An American institution was born.
To celebrate the run up to Mardi Gras, I give you another from the vault: “Tabasco (Large & Small)”….

We love New Orleans — we lived there for three months in 2011, and we’re headed back in April. I’m doing daily blog posts sharing my New Orleans-themed art, celebrating what some are calling Super Gras: the Super Bowl was Sunday, in the middle of carnival season leading up to Mardi Gras Feb. 12.
